Lemon Pound Cake

Every good cook should have one recipe that they have up their sleeve to wow guests and this is mine. I love everything lemon and this is no exception. 

I have a confession to make, I am horrible at making rice so I bought a rice maker. I cant really do pie crust either that is why we have ready made. It is good to have a good dessert in your arsenal also.

This cake can be enjoyed with breakfast with a cup of coffee. It can also be enjoyed for dessert after lunch or dinner, or as a snack in the afternoon with a cup of tea. Either way, who ever you decide to serve this to will love it.

Lemon Pound Cake


3 sticks softened butter

2 cups white sugar

6 eggs

1 tablespoon lemon extract

8 ounces sour cream

3 cups flour

1 stick butter

1 box confectioner sugar

1 teaspoon lemon zest


Preheat oven to 350 degrees.

Cream butter and eggs and add eggs one at a time  until blended. Add extract and sour cream. Add flour and blend until smooth. Pour into a prepared pan and bake for 45 to one hour. Allow to cool for an hour before adding glaze. For glaze melt butter in a sauce pan and add confectioner sugar and lemon zest. Pour over cake.
