Pumpkin Bread
Ingredients:
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoon Pumpkin Pie spice
2 eggs
1 1/2 cups granulated sugar
1 cup pumpkin puree
1/2 cup vegetable oil
1/3 cup water
Directions:
Preheat oven to 350 degrees
Prepare a loaf pan by spraying with cooking spray. In a large bowl combine flour baking soda salt and pumpkin spice. Make a well in the bottom
In a separate bowl mix eggs sugar puree oil and water. Pour the liquid ingredients into the well and mix thoroughly. Cook for 60-70 minutes or until a inserted in the center comes out clean.

This sounds like a lovely version of pumpkin bread Veronica.
Sounds delicious! I bet it would go great with some brown sugar mixed in there too! Recently I’ve had more appreciation for pumpkin, and my local organic farmer’s market is brimming with pumpkin everything. I’ll not pass up an opportunity to give it a shot.
