Fig Oatmeal Breakfast Bars

A while back a reader e-mailed me and asked for a good fig bar recipe. Well I came up with one that uses dried figs. Unfortunately when I decided to make the recipe figs were no longer in season and I had to use the dried ones instead. I love Fig Newtons and thought these would be the perfect thing for breakfast.

Fig Oatmeal Breakfast Bars
Ingredients:
1 1/2 cups figs chopped
1/2 cup seedless raisins
juice and zest of 1 orange
2 cups rolled oats
2/3 cup all purpose flour
1/4 teaspoon salt
1/4 teaspoon nutmeg
6 tablespoons cold unsalted butter cut into pieces
2 tablespoons honey
Directions:
Preheat oven to 350 degrees.
Combine figs, raisins, orange juice and zest along with 4 tablespoons water in a small saucepan. Bring to a boil. Reduce heat and simmer for 5 minutes.
Put oats, flour, salt, nutmeg and butter in a food processor. Pulse until it looks like wet sand. Add 1/3 cup water and process until just blended. Spray a 8 inch baking dish with cooking spray and press half the oat mixture in the bottom of the pan. Transfer the rest of the oatmeal to another bowl and set aside. Add the fig mixture to the food processor and pulse until it has a jam like consistency. Spread fig mixture over bottom crust and top with remaining oat mixture. Drizzle honey over the top and place in the oven to cook for 35 minutes or until crust is golden brown.
