Welcome to Christmas Week, a multi-blogger event co-hosted by Kim of Cravings of a Lunatic and Jen from Juanita’s Cocina! Buckeyes (Peanut Butter Balls)
Ingredients:
1 cup peanut butter
2 sticks butter
1/2 tsp vanilla extract
5 cups confectioners sugar
Dark dipping chocolate
Directions:
In a mixing bowl combine peanut butter, butter vanilla and confectioners sugar. Roll into 1 inch balls Place on a cookie sheet lined with wax paper.
Heat up the dipping chocolate. Use a double boiler or microwave. Cook chocolate until melted and smooth about 5 minutes.
Using a toothpick or wooden skewer, dip the balls in the chocolate. Allow to cool completely before packaging.

I’ve never had a food processor so not sure what the first thing would be to make in it….but I’m thinking hummus…
What a great event! Jen and Kim rock! We have a coach whose wife always makes these for us for Christmas. I look forward to that gift every year. These are too decadent!

My sister made these every single Christmas growing up – they’re her “things” – and I’ve NEVER made them! We live 1500 miles away now so I guess I need to whip some up occasionally to fill the void ๐
If I make a batch of these I will probably hide them so I can eat them all myself! I am a total peanut butter freak! I must have these! ๐
