Purple Mashed Potatoes
I see these purple potatoes everywhere. The first time I decide to make them I couldnt find them. It seems like me, everyone wants to make them. Now you can get them just about everywhere. They are a waxy kind of potato perfect for mashed potatoes or potato salad. They have a deep purple color when you peel them. When they are boiled they turn to a more blueish purple not as vibrant. Anyone who knows me knows that there is not a potato that I do not like. These purple ones are good, a bit different than the white ones. They don’t seem as starchy. This is definitely a keeper, infact I think I may serve this along with the ham at our Easter celebration. So if you are out and about and see these purple delights, you should purchase them, give them a try. I think you will be glad you did!

Purple Mashed Potatoes
Ingredients:
1 pound purple potatoes peeled and quartered
1 teaspoon salt
4 tablespoons butter
1/4 cup milk
1 teaspoon salt
1/2 teaspoon pepper
Directions:
In a medium sauce pan add the potatoes and add enough water to cover. Turn the heat on high and add the salt. Cover the potatoes with a lid. Allow to cook on medium high heat until tender about 20-25 minutes. Drain and mash the potatoes with a potato masher or electric mixer on low spped. Add milk, butter, salt and pepper. Mix until combined.
