This week Dianna Kennedy, Mexico’s famous and enduring chef is number 45 on
Gourmet Live’s List of 50 Women Game Changers in Food. This is the brain child of Mary over at
One Perfect Bite.
We are featuring all 50 women, on this list.
We feature one a week and post them usually on Fridays.
We are in the homestretch with now only four more to go.
Although I joined late, I am not ashamed to say, I will miss all my friends when this wonderful ride is over.
But I digress,
This post is all about Dianna Kennedy.
As it should be.
Although she was born in the United Kingdom, she calls Mexico home.
She is the authority on Mexican cooking and with good reason. It is no wonder she is so good, she has lived in Mexico since 1957, where she arrived to marry her husband Paul Kennedy. He was a foreign corespondent for The New York Times.
While in Mexico she traveled around and learned many cooking techniques along with the history of the foods of Mexico.
In 1966 she moved back to New York and the next year her husband Paul died.
Since the publication of her first cookbook in 1977 , The Cuisines of Mexico, eight more cookbooks followed. She continually does research, cooking lessons and lectures for future cookbooks.
She currently resides in the state of Michoacan.
I decided to make her Carnitas. I couldn’t get over how simple this dish was, and how delicious.
Even the Monkey girl who turns her nose up at just about everything loved it.
I think you will love it too.

Carnitas
Adapted by Diana Kennedy
3 lbs pork butt or country style spare ribs
4-6 cups water
2 tablespoons salt
Directions
Cut meat into chunks about 2×2.
Cover the meat with the water in a dutch oven or other large pot
Add the water and salt.
Bring to a boil.
Lower the temperature and allow to simmer until all the water is evaporated
This will take about 3 hours.
Continue cooking until all the fat has rendered out and it is browning in the fat.
Once it is browned remove from pan and serve on tortillas.
Top with any topping you choose.

Can’t believe how simple it is to make carnitas – I found the Mexican recipes from Diana Kennedy all fairly simple, but full of flavor.
Thanks for the introduction to yet another new-to-me cook. I love Mexican food but it is so rare to get it in Ireland. This is a dish I am definitely trying and your topping of avocado n lime looks like a great introduction to carnitas too, Veronica!
