Spring has sprung.
The days are getting longer, and I have cabin fever. I noticed it about a month ago. I couldn’t wait to get out in the garden to plant some things. Even though I knew spring was calling me, I purchased a few plants and I waited.
I put my herbs in my garden window and watered them faithfully.
A couple of years back, I planted a few things in my garden during March. We had a cold snap and I lost everything.
I had to replant.
I know now why they say do not plant until April 15. I know now that is sound advice that I abide by.
 So this weekend I guess I will be planting.
WOW! I cant wait to taste the homegrown tomatoes, cucumbers, and peppers.
Hello Spring!
Grilled Tilapia Tacos
1/4 cup olive oil
3 tablespoons lemon juice
1 1/2 teaspoon honey
1 tablespoon chili powder
1 lb Tilapia Fillets
4 flour tortilla
shredded lettuce
sour cream
Combine marinade ingredients in a small bowl. Pour marinade over tilapia in shallow baking dish. Cover with plastic wrap and refrigerate for one hour. Preheat grill to medium heat. Discard marinade. Carefully place fillets on oiled cooking grate and grill 3 minutes per side until just cooked through. Place tortillas on grill to warm, flipping once. Remove tortillas and place on warmed plates. tip with fillets and garnish with lettuce cheese and sour cream. Fold tortilla over filling and serve immediately.
