Chili, Fall Days and Football

Fall means football and in the Hampton Roads area it means college football. There are a few to choose from but my favorite is Old Dominion University. Last year I went several times and really enjoyed myself. This year, I recently had the opportunity to go to an Old Dominion University game.
Even though we didn’t win, I had  a very good time. It was a nice fall evening, the air was a little crisp. It was exhilarating watching them go back and forth with the ball. Fall is my favorite time of year. This reminds me of sweaters, apple pie and chili. All those wonderful things that are so comforting to us this time of year. I am beginning to see the pale leaves cover the gardens and roads of our area.
Even though they didn’t win, they played hard.



Beef chili


1 lb ground beef
1/2 cup onions
1 can corn
1 can rotel tomatoes
1 can fire roasted tomatoes
1 can chili beans
2 tablespoons chili powder
1 can kidney beans
2 cups of stock or water


Brown the ground beef and onions in a skillet until beef is no longer pink. Pour ingredients into a slow cooker. Add the corn, tomatoes, chili powder, chili beans, kidney beans and stock or water. Stir to combine. Cook on low for 8 hours. Serve with crackers.
