Christmas Cocoa Cake

This simple cake is very impressive. I just dust a bit of powdered sugar over the top. It is moist and light enough to eat anytime of the day. 

I was looking for something chocolate like but not to heavy for a church function. There will be other food and I just wanted something to enjoy with coffee after dinner. This recipe is so simple and you probably have all the ingredients on hand.

If you don’t have any brewed coffee sitting around you can use just water. I just love the taste of coffee and chocolate. I think it brings out the taste of the chocolate even more.

Christmas Cocoa Cake

Ingredients:

2 cups flour

3/4 cup cocoa powder

1 1/2 teaspoons baking soda

1/4 teaspoon salt

1 1/2 sticks salted butter at room temperature

1 3/4 cup brown sugar

2 large eggs

1 1/3 cups cold coffee

1 teaspoon vanilla

confectioners sugar for dusting

Directions:

Preheat oven to 350 degrees. Spray a 9 x 9 inch square pan with cooking spray. Or you could use a 9 inch round pan. Just make sure your pan is at least 2 inches high.

In a separate bowl whisk together your flour, cocoa, baking soda and salt. Set aside.

In your mixer combine butter and brown sugar mix until pale and fluffy. Add the eggs one at a time. Then the vanilla.

Alternately add the flour mixture and the coffee to the mix until it is all incorporated.

Pour into prepared pan and bake until a toothpick inserted in the center comes out clean, about 55 minutes to 1 hour.

Allow to cool completely before removing from the pan.

Dust with powdered sugar.
