Leftover Turkey Stuffed Peppers

Transform  your Holiday leftovers into a Mexican fiesta. These peppers are stuffed with all your thanksgiving leftovers. Add taco seasoning and black beans and you have a fiesta worthy meal. 

These peppers are cooked in your slow cooker, got to love that! It makes it easy and you can let it cook while you do other things.

Do not get me wrong I love thanksgiving leftovers, but after day 4 or 5, it starts to get old. Why not change it up a bit and take some of those leftovers and change the flavor profile. I love gravy, but not 5 days in a row. Make you taste buds happy and your wallet too.. Most of this stuff you probably already have in your pantry. Also, this freezes well to so that is a win win for everyone!

Leftover Stuffed Peppers

Ingredients:

2 cups leftover turkey (ground in a food processor)

2 tablespoons taco seasoning

1/2 cup water

1 can black beans

1/2 cup cooked brown rice

2 cups leftover stuffing

4 peppers

1 cup stock veggie or chicken

2 cups Shredded cheese

Directions:

In a large bowl combine turkey, taco seasoning, water and black beans. Stir in rice and stuffing. Cut peppers length wise and remove ribs and seeds.  Place peppers in slow cooker facing upwards. Fill the peppers with turkey mixture. Pour the stock in the bottom of the slow cooker. Cook on high 3 hours. The peppers should be soft when they are done. Sprinkle with cheese before serving.
