Blueberry Snack Cake

There are a lot of health benefits to eating blueberries. Most people just love blueberries and the health benefits are a added bonus. 

I probably should have called this a breakfast cake. It is delicious without a lot of stuff on the top. I wanted the sweet blueberries to come through and they did. I suppose you could put a glaze over the top if you really wanted to, but it is not necessary. It also freezes well so on those occasions when you don’t have time to make something for that bake sale, make it now and freeze it. It will make your life a lot easier and sweeter.

Blueberry Snack Cake

Ingredients:

1/2 cup butter 1/2 cup granulated sugar 1 teaspoon vanilla 1/4 teaspoon salt 2 eggs 1/3 cup milk 1 1/2 cups all purpose flour 1 teaspoon baking soda 1/2 teaspoon baking powder 1 cup blueberries

Directions:

Preheat oven to 350 degrees. Grease square 8x8 pan. Cream butter and sugar add vanilla salt and eggs. Beat until combined. In a separate bowl combine flour baking soda and powder. Alternately add dry ingredients and milk to mixture until everything is combined. Fold in blueberries and place in prepared pan.
