Apricot and Pineapple Jam

When life gives you apricots, then you should make apricot and pineapple jam.

You heard the old adage when life gives you lemons you should make Lemonade? Yeah well, I was willed a whole boat load of apricots from a friend and I wanted to do something with them before they went bad. I froze some and I decided to make this wonderful jam. I am blown away with the combination of apricots and pineapple. It is a match made in heaven. When you make this you will be looking for ways to enjoy this jam. I think you are going to enjoy it as much as I have.

Apricot and Pineapple Jam

Ingredients:

2 lbs apricots pitted

1 can of crushed pineapples

8 cups granulated sugar

1/2 cup lemon juice

1 box fruit pectin

Directions:

Fill water canner half way with water and bring water canner to a boil. Meanwhile, process apricots in food processor. You should have over 3 cups of pulp. Add the pulp to a medium sauce pan along with canned pineapple sugar and lemon. Bring to a boil and allow to boil until sugar is dissolved about 10 minutes. Add pectin and boil another 4 minutes. Pour into clean canning jars and process in a water bath for 15 minutes. Remove and allow to seal overnight. Any jar that does not seal in 24 hours should be kept in the fridge.
