Apple Coconut Cake

The combination of apples, cinnamon and coconut is so amazing! This moist and delicious cake will leave you speechless after you taste it.

It is getting that time of year. It is when everything is pumpkin and apple. Unfortunately here it is still 90 degrees so it is kind of hard to think along the lines of fall. That should happen sometime around late September and into October. Some people blame it on global warming. Either way, It will be a welcoming improvement to the hot dog days of summer.

Apple Coconut Cake

Ingredients:

3 cups flour

1 teaspoon baking soda

1 teaspoon salt

1 cup vegetable oil

1 teaspoon coconut extract

2 cups sugar

3 eggs

2 cups diced peeled apples

 

 

Directions:

Preheat oven to 350 degrees. Combine flour, baking soda and salt in a medium bowl. Add oil, coconut extract, sugar and eggs. Fold in diced apples. Pour into a greased tube pan. Bake in the oven for an hour or until a cake tester inserted in the middle of the cake comes out clean.
