Chipotle Lime and Cilantro Rice

This is my take on the delicious seasoned rice they serve at Chipotle. It is a super easy dish that you can serve with just about anything.

I have a secret to tell you.

I was never good at cooking rice.

There I have said it.

There are a lot of other great things I can cook, but unfortunately rice is not one of them.

Well, for one thing, it would always stick to the bottom of the pot, or worse burn and I had to soak my pot for a day just to get it clean.

Then if I did not set my timer for exactly 25 minutes, I would often open the pot to early.

I would end up with a wet mess instead of fluffy rice.

To remedy that I bought a rice cooker and never looked back.

While at Chipotle I fell in love with their rice. It was so light and fluffy and full of lime flavor that I decided to try to make it at home.

I hope you like the results as much as I did.

Chipolte Lime and Cilantro Rice

Ingredients:

2/3 cup white Basmati rice
1 lime juiced
1 cup vegetable stock
1 tablespoon fresh cilantro

Directions:

In your rice cooker add rice, lime juice and vegetable stock. Set rice cooker to done. Your rice should be finished in about 25 minutes. Fluff rice with a fork and add chopped cilantro. If you would like, garnish with a lime wedge.
