Patriotic Eaton Mess

I think this dessert is perfect for this time of year. I also think this dessert is perfect for this months #InaFriday. It just so happens that this months Ina Friday falls on our Independence day. She does have a flag cake that she makes for wonderful holidays like today, but I wanted to make something different.

In one of her episodes she made Eaton Mess. It had fruit and these meringue cookies with lots and lots of whipped cream. Oh how I love whipped cream. 

You can make the meringue cookies if you feel compelled to do so, but with all the heat here in Virginia I decide to purchase mine. Why heat up your stove if you do not have to? Anyway I added some blackberries to give it a red, white and blue look to be more patriotic. You can use any fruit you like.

Patriotic Eaton Mess

Ingredients:

3 6 oz containers raspberries
1 1/2 cups white sugar
2 tablespoons lemon juice
3 6 oz containers of Blackberries
2 1/2 cups whipping cream
1/4 cup white sugar
2 teaspoons vanilla extract
5-6 bakery meringues broken into pieces

Directions:

Pour 3 of the containers of raspberries and the sugar in a medium sauce pan. Add the lemon juice and cook on medium high for 10 minutes until it turns into a syrup add the blackberries and gently fold into the mixture. Put in the fridge until cold. Beat the whipped cream, sugar and vanilla with a mixture until firm peaks form. In a decorative glass layer whipped cream raspberry mixture and meringues. Continue layering until glass is full. Continue until all the glasses are filled up. Try ending with whipped cream. Garnish with extra berries. Serve immediately.
