Ranch Potato Salad
I have been looking for the illusive blue potato.
Every time I go to the grocery store, I look for them but they always seem to be out.
I did find a bag of blue red and yellow waxy potatoes, great for cold potato salad.
This is the perfect recipe for our Labor Day Cook Out Recipes for #Sunday Supper.

Ranch Potato Salad
Ingredients:
2 1/2 lbs red, purple and yellow potatoes
1 cup Ranch dressing
1 tablespoon Dijon mustard
1/4 cup sliced celery
1/4 cup chopped onion
1/4 cup pimentos
2 hard boiled eggs coarsely chopped
chives for garnish
Directions:
Cook potatoes in a small amount of boiling salted water for about 35 minutes or until tender. Drain and peel when cool enough to handle. Cut into 1/2 inch cubes and place in a large bowl. Add dressing, mustard, celery, onion, pimentos, and eggs. Toss gently to mix well.Cover and refrigerate for several hours. Sprinkle with chives right before serving.

That is so pretty! I wish places round here sold a greater variety of potatoes; all I ever seem to find are anaemic-looking ones! Even sweet potatoes are something of a novelty.

Love your pics and presentation. We bought some blue/purple potatoes at an FM once and we found them to be quite starchy. Definitely not good for mashed potatoes! Made a gluey mess ! Lol. Happy Labor Day!
There is something about potato salad that is the perfect compliment to a BBQ. I love the use of the different coloured potatoes, makes for a beautiful presentation.
I love making potato salad from red, white, & “blue” potatoes! I think they’re especially perfect for Labor Day (or 4th of July). Yours sounds mouthwatering!
