Meatless Friday and Creamy Crab Omelette

OK Yall, we are in the home stretch. Easter is less than three weeks away.

Have you noticed as you get older time seems to fly? I wish I had a dollar every time my daughter proclaimed,

“That happened a while back, where have you been?”

I have also been told that I tend to repeat things over and over again.
I saw my mother-in-law reading a book entitled Getting older isn’t for wimps.

You got that right sister!

Here is another Lenten recipe. I will post at least two more, before it is all said and done. Hang in there we are almost there. If you fell of the wagon, and didn’t give up what you wanted to give up. Tomorrow is another day my friend. Perhaps another attempt is in order. The second time is a charm.

Creamy Crab Omelette
6 large eggs
4 tablespoons water
1 tablespoons butter
salt and pepper
Filling
8 oz crab meat
8 oz cream cheese
1/4 cup onions chopped fine
1 clove garlic minced
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon soy sauce

Mix all the filling ingredients together and set a side.

In a frying pan saute onions and garlic.

Break eggs into a medium bowl. Add water, salt and pepper and beat gently with  a fork until just combined. DO not over beat

Pour the egg mixture into the pan tilting pan to coat all sides. As eggs are setting, carefully lift edges with soft spatula letting the uncooked egg run underneath. the pan as you go to lift all sides. Cook just set with lightly golden bottom and moist middle
