Food, Family, Faith and Rachel Cookies

Every year Christmas celebrations change even in the most traditional of families. Each celebration will be different due to many factors: deaths, births, who is in town, etc. But the key thing here is family. After all, we’re celebrating the Holy Family.
With that said, I would like to wish all of you, my extended blog family, a very Merry Christmas and Happy New Year. I would also like to thank you for taking the time out of your busy schedule, to check out my blog.
I call these Rachel cookies because my daughtersclassmateRachelCiampoli loves them. In fact, I think I could get her to do back flips if I wanted. We have known Rachel and her family for a long time and they are considered family.

Rachel Cookies

Ingredients:

4 oz Hershey bar
2 1/2 cups oatmeal
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 c. butter (2 sticks)
1 c. brown sugar
1 c. white sugar
2 large eggs
2 tsp. vanilla
12 oz. chocolate chips
 

Directions:

First things first preheat oven to 375
Use a grater or food processor to grate a 4 oz Hershey bar. I use the food processor. My hands are warm and the chocolate tends to melt as I grate it. Remove the chocolate from the food processor. 
In the same  food processor add oatmeal and process until ground. About 10 pulses. Add flour, baking powder, baking soda and salt. Pulse to combine.  
Cream together butter and both sugars. Add the vanilla and the eggs. Mix to combine. Add the flour to the butter mixture, a bit at a time. Add grated Hershey bar. 
Fold in the chocolate chips. Make walnut sized cookies. I use a small ice cream scoop to ensure they are all the same size. Place 2 inches apart on an ungreased cookie sheet.
Bake for 10 minutes. They should be golden brown and slightly puffy.
