Banana Pudding

MMMMM banana pudding. It is heaven in a bowl. I am not talking about the stuff that you make with pudding mix. I am talking about making a custard from scratch and when it is still warm and yummy, pour it over some vanilla wafers and add some bananas. You are in banana pudding heaven my friend. With this recipe you could rule the world. I want you to promise me that you will only use it for good. This blows that pudding mix out of the water. Now, I like to eat mine a little on the warm side. I took this picture after I mixed it up and added a meringue and chilled it. I should have posted this last week, come to think of it. All the cookouts everyone was having over the Labor Day weekend, this would have been great! I am telling you, your friends will be clamoring for the recipe. You could tell them, “Oh this is just something I whipped up.” If you can put it in a clear bowl, that would help with the presentation. It shows the layers of custard, wafers and bananas. I sure hope you enjoy this as much as I did.

The best banana pudding ever!

1 box vanilla wafers

5 bananas
1/2 Cup Sugar

1/3 Cup Flour

2 Cups milk
1/2 teaspoon Vanilla

Place a layer of Nilla Wafers in the bottom of a medium size clear bowl. Slice a banana over the top. Repeat two more times with another layer of wafers and remaining bananas. In sauce pot (or double boiler) on medium low heat, add sugar, flour, egg yolks, milk, and salt. Stir well with wire whisk. Allow to cook, stirring constantly to prevent scorching, until thickened – about fifteen minutes. Add in vanilla and stir. Immediately pour over wafers and bananas. Let sit for about five minutes or so before serving, to allow wafers time to absorb pudding. Top with meringue, if desired.
